Portland has a lot of great mixologists. In my neighborhood, I visit Aviary regularly. They have a beautiful bar menu and a great staff! One of my favorite drinks on the Happy Hour menu is the “Rattlesnake”. I love the frothiness from the egg white. They pour over ice in an old fashioned glass rather than up.

Recently I went to Carlita’s in the Pearl district and had a very good drink called “Carlita’s Way”.

I realized there were some similarities here, and thought I would play around. I didn’t have Falernum, but I did have simple syrup. Here’s what I came up with…

ingredients for two drinks

  • one egg white

  • 4 oz rye (my favorite)

  • 1 oz lemon juice

  • 1 oz simple syrup

  • 6 dashes peychaud’s bitters

  • 3 dashes angostura bitters

  • two absinthe rinsed coup glasses

Method

  1. shake egg whites for at least a minute or two before adding anything else.

  2. add the rest of the rye, lemon juice, syrup, and bitters and shake again. Make sure it’s frothy at this point. Then add ice, and shake until cold.

  3. pour in an absinthe rinsed glass. Garnish with lemon peal if desired.
